Dumplings:
Dough Recipe: Ingredients:
- 200g plain flour
- Pinch of salt
- 110-120ml water
Instructions:
- In a big bowl, combine 200g of plain flour with a pinch of salt.
- Gradually add 110-120ml of water to the flour mixture.
- Knead the dough for 3-5 minutes until it becomes smooth and elastic.
- Rest the dough for 1 hour, either wrapped in cling film or stored in an airtight container.
Dumpling Filling: Ingredients:
- 250g ground chicken thigh
- 2-3 spring onions, finely chopped
- 2-4 cloves of minced garlic
- Salt and pepper to taste
- 1-2 tablespoons of garlic chilli crisp
- 2 tablespoons of soy sauce
- 1 tablespoon of sesame oil
Instructions:
- In a bowl, combine 250g of ground chicken thigh with finely chopped spring onions, minced garlic, salt, and pepper.
- Add 1-2 tablespoons of garlic chilli crisp, 2 tablespoons of soy sauce, and 1 tablespoon of sesame oil to the chicken mixture.
- Mix all the ingredients together until well combined.
Assembly and Cooking: Ingredients:
- Prepared dumpling dough
- Dumpling filling
- Chilli oil (for serving)
- Scallions (for serving)
Instructions:
- Roll out the prepared dough into dumpling sheets or wrappers.
- Place a portion of the dumpling filling onto each dumpling wrapper, making sure to seal the filling properly with the dough.
- Steam the dumplings for 10-12 minutes until they are cooked through.
- Serve the Garlic Chicken Dumplings with chilli oil and garnish with scallions.
